These tasty little bites are great to have as a guilt free snack or even for breakfast if you want something as you run out the door to have with your coffee.
2 tablespoons of TLC Mix
3/4 cup of dates
1/2 cup of shredded coconut
1/2 cup of cashews, almonds or hazelnuts .
1 teaspoon of coconut oil
1 tablespoon cacao powder (optional)
a little grated lemon rind
Extra coconut or ground nuts for rolling (the balls not yourself)
Personally I throw all the ingredients in the food processor at once and just mix until it comes together, then roll each ball in coconut or ground nuts.
Or... you can grind your nuts (not to nut butter though), soak your dates in hot water and chop, mix together will all the other ingredients... then roll them in the extra coconut or nuts.
