Experimenting as tend to do often...... and being inspired by a recipe sent to me for curried cauliflower soup from a lovely lady called Jo, I came up with this little creamy number.
I cooked it in a slow cooker as I like just to throw everything in, set and forget , but you could do it on a stove top.
The Yassa adds a nice little lemon hint and depending on your taste you can either add more or less.
1 x tablespoon of coconut oil (optional)
1x cauliflower , washed and broken into smaller pieces.
1 x large brown onion, chopped
4 x garlic cloves
1 x can coconut cream
1 x can coconut milk (if you like you can replace the cream with milk)
1 x teaspoon of Noccas (or to taste)
2 x tablespoons of Yassa
1 x medium ripe avocado.
Salt to taste.
Well... I just threw everything in the slow cooker except the avocado, when it was cooked (4 hours later) I added the avocado and whizzed it with a stick blender before serving.
But... if you want you can brown the onions and garlic with the Noccas in a large pot on the stove, add the cauliflower and let it sweat a little , add the rest of the ingredients except the avocado, a little water if necessary and simmer until cauliflower is tender.
Add the avocado and blend until smooth , season to taste.
