2 heaped desertspoons of TLC Mix
3/4 cup of almond meal or ground cashews
1/2 cup almond/soy or regular milk mixed with 1 beaten egg.
Add the milk and beaten egg to the dry ingredients, mix until combined. Let stand for 30 to 40 minutes if you have time to allow the chia in the TLC to do it's magic.
Melt 1 teaspoon of coconut oil on a hot pan and drop tablespoons of the mixture to cook.
When bubbles start to appear or the surface carefully turn them over and cook the other side.
Place on a plate to keep warm until all the mixture is used.
1/2 cup mixed berries
1/2 cup Hibiscus tea
2 teaspoons coconut palm sugar
Boil the strained Hibiscus tea in a small saucepan with the coconut palm sugar. Simmer until slightly reduced then add the berries
Arrange pikelets on a plate pour the berry mix over them and serve with a dollop of yoghurt or cream and a steamy cup of Hibiscus Tea.
