Bean and chipotle dip

I love making interesting surprise food and watching peoples reactions as they taste it, usually its a good reaction. 

Anyway this is a simple, quick but very ,very tasty dip to take to your next party or BBQ. 


1/2 cup of Chipotle Salsa

1 cup of cooked pinto beans (see my recipe here)

a little sour cream or greek yoghurt or nut cream for a vegan version 


1. Mash the beans with a fork or potato masher, I like them smashed but with a few chunky pieces. 

2. Roughly stir in the chipotle salsa, again I like to get clumps of beans and salsa.

3. Serve with a dollop of sour cream, greek yoghurt or nut cream on top and a plate of tostadas. (corn chips)

Note: if you prefer you can blend the beans,  salsa and sour cream or yoghurt together until smooth .

Also is quite nice served warm.
