Avocado eggs with Chipotle salsa

This is great for breakfast/brunch or lunch. Very healthy and free from dairy, gluten and is also low carb, ( if you leave out the bacon its vegan) :0

Serves 2 or 1 if you are really hungry!

Ingredients:

2  to 3  tablespoons of Chipotle Salsa

1/2 teaspoon of Noccas

2 eggs 

2 tablespoons of water

1 small avocado mashed

2  rashers  smoked bacon ( I use one from The Smoke House that I purchase at the Bundoora Farmers Market)

1/2 red capsicum

3 or 4 medium  mushrooms

a little coconut oil

Method:

Pre heat a  non stick flat grill or frypan with the coconut oil

Slice mushrooms, capsicum and bacon and place into the pan, while that is cooking

Beat the eggs in a small bowl with the water and Noccas then stir in the mashed avocado, pour into the mushrooms etc. in the pan and turn over until all the egg and avo mix is set. 

To serve top with Chipotle Salsa.
